I’m possibly the slowest cook I’ve ever met. My friends like to joke a person should anticipate hunger hours ahead and let me know if I’m the one cooking what they will eat. I know how annoying this may be for people who aren’t used to my method of coking, and so I like to find faster alternatives for making delicious meals. One of such ways, is having parboiled pasta, and then making a super-easy pasta sauce.

This tomato butter pasta sauce is great because you don’t need a whole lot of ingredients to make it, and it takes less than 30 minutes to cook. It also tastes amazing when I do it, so that’s a plus.

Tomato Butter Pasta Sauce Recipe 

Ingredients

  • 1 tbsp. extra-virgin olive oil
  • 1 onion, chopped
  • Salt
  • Freshly ground black pepper
  • 2 garlic cloves, minced
  • 3 lb. fresh tomatoes, chopped
  • 4 tbsp. butter

 Tomato Butter Pasta Sauce Recipe

Method

  • Heat olive oil in a large skillet over medium heat.
  • Add onions and season with salt and pepper to taste.
  • Sauté until the onions begin to soften and then add in the garlic. Cook for about 30 seconds.
  • When you start to smell the garlic cooking, add the tomatoes and stir to combine.
  • Cook over medium heat to let the tomatoes break down.
  • When the mixture reaches a simmer, reduce heat slightly and stir in butter.
  • Season again with salt and pepper and let simmer for about 15 minutes more.
  • Taste and season as necessary.

 

When your sauce is ready, serve over cooked pasta and top with basil and grate some cheese over it if you like. Sometimes, I eat this with rice as well when I don’t want to go through the stress of making actual stew.
